Sheet Pan Chicken Fajitas: Dinner on the Deck After a Long Day

We love fajita night — especially in the spring when the windows are open and we can eat outside. These sheet pan chicken fajitas are one of my go-to’s after a long day of showings or running around with the kids. Everything roasts on one pan, which means fewer dishes and more time to relax.
If you’re in the Denver or Sherrills Ford area, grab some fresh bell peppers and onions from the weekend farmers market. The colors and flavor are unbeatable.
Sheet Pan Chicken FajitasIngredients:
- 1½ lbs chicken breast, sliced thin
- 3 bell peppers (red, yellow, green), sliced
- 1 red onion, sliced
- 3 tbsp olive oil
- 1 packet fajita or taco seasoning
- 1 tsp garlic powder
- Salt & pepper
- Warm tortillas, sour cream, salsa, lime for serving
Directions:
- Preheat oven to 400°F.
- Toss chicken, peppers, and onions in oil and seasonings.
- Spread on a sheet pan in one layer.
- Bake 20–25 minutes, stirring once.
- Serve in tortillas with your favorite toppings.
